The latest innovation of the X-Oven range is the Burger Machine, a charcoal oven with built-in fry top designed to exalt the qualities of gourmet hamburgers.
The new Burger Machine delivers perfect cooking in terms of intensifying the flavour of the meat, retaining its organoleptic properties, speed, convenience, safety and wholesomeness. The valuable raw material is fully respected and enhanced while saving time, space and energy.
The machine is based on the concept of charcoal-cooking in a closed chamber and exploits the heat generated inside the chamber, both to cook the foods placed on the grill drawers and to heat the fry top plate on top of the cooking chamber. This way the whole cooking process is dealt with just a single equipment.
Thanks to the closed chamber, the cooking is accurate and uniform since the meat does not dry and retains all of it organoleptic properties. At the same time, the bread is also toasted in an area – the fry top – that is totally separated from the meat, thus preventing the risk of becoming soaked with grease and cooking residue.
Furthermore, as is standard in the X-Oven range, the kitchen operator is protected from the heat sources, opens and closes the grill drawers with minimum effort, checks and works with the food without being struck by fumes and high temperature steam, assembles and serves the sandwich extremely quickly (100 pcs/hour) and with ease of movement.
The Burger Machine, designed to meet the needs of the restaurants specialised in hamburgers, is also suited for all charcoal cooking not involving large pieces.
