The Refractory plates set includes two 2/3 GN plates, one in a raw material and the other with a non-stick coating. The refractory plates have a honeycomb geometry made in the most ancient material used to cook foods indirectly: terracotta.
Terracotta heats and diffuses heat uniformly and absorbs moisture.
The contact heat is transmitted very delicately, so it can be used easily with no risk of burning various foods such as bread, pizza, focaccia, cakes and other foods normally cooked in combined ovens with very precise heat.
